Choose bacon that will cook quickly and release extra fat and flavor when sautéed․ The smoky flavor of bacon can enhance the flavors of this pasta dish․ Spaghetti is tossed with tomato cream sauce, garlic, fresh cherry tomatoes, Parmesan cheese, and a touch of red pepper flavor․

Low and slow bacon cooking yields bacon bits and a tablespoon of bacon grease for cooking garlic․ Broth is added a few tablespoons at a time to deglaze the pan․ Tomato paste and cream are added with oregano, basil, mustard powder, onion powder, and pepper to create a sauce․ Room-temperature cream cheese is added to the sauce and mixed in․ Fresh Parmesan cheese is topped on the dish․
As the sauce simmers, partly covered, cherry tomatoes will soften, showing that they are contributing liquid to the sauce․ Boil the spaghetti for 1 minute less than the package recommends․ Lower the sauce's heat before adding Parmesan cheese․ Overheating the cheese base will result in curdling and an unpleasant texture․ Adding hot spaghetti to the same pot as the sauce will help it absorb the sauce as it thickens․
Top with crushed bacon and parsley․ Serve with Garlic Bread with Cheese as instructed․ Leftover sauce will reduce slightly when refrigerated or frozen․ Use less than half a pound of noodles to avoid excess sauce․ The recipe developer recommends airtight containers for refrigerating or freezing leftovers․

Why you'll love this recipe
- Five pieces of bacon provide a crunchy texture to the meal․ The leftover bacon grease helps flavor the garlic and tomato sauces, which would otherwise not have much flavor․
- Cherry tomatoes break down and release moisture in tomato sauce, giving it stronger tomato flavor than tomato paste․
- Shredded Parmesan cheese is added while the sauce simmers․ Fresh Parmesan cheese can be used to make a smooth, creamy sauce․
- Room-temperature cream cheese is easier to mix into a hot sauce and adds minimal thickness to the sauce with no additional ingredients․
- Small amounts of oregano, basil, mustard powder, onion powder, pepper, or cayenne, added, do not mask bacon and tomato and other dairy flavors․
- Spaghetti is a good choice, though other pasta types mentioned in this recipe include shells, bow ties, penne, and thin spaghetti․ You can serve this sauce with other pasta you have available․
Ingredients
- •¾ teaspoon dried oregano
- •½ teaspoon dried basil
- •½ teaspoon mustard powder
- •¼ teaspoon onion powder
- •⅛ teaspoon pepper
- •1 pinch cayenne (optional)
- •5 slices bacon
- •4 cloves garlic (minced)
- •1 cup chicken broth
- •2 Tablespoons tomato paste
- •1 cup heavy cream
- •1 pint cherry tomatoes
- •1 pinch red pepper flakes
- •2 Tablespoons cream cheese (at room temperature)
- •½ cup Parmesan cheese (grated)
- •8 oz spaghetti
- •salt (for pasta water and to taste)
- •fresh parsley (to garnish)
Instructions
- 1
Cook the bacon slowly over low heat until crispy on each side.
- 2
Remove the bacon and set it aside on a paper towel-lined plate. Reserve 1 tablespoon of bacon drippings.
- 3
Remove any black flecks from the pan, leaving the brown remnants on the bottom.
- 4
Add the reserved bacon drippings and garlic to the pan over medium heat.
- 5
Add a splash of chicken broth and use a silicone spatula to clean the bottom of the pan. Continue adding small splashes of broth while the garlic cooks for 1 to 2 minutes.
- 6
Add the remaining chicken broth, tomato paste, seasonings, and heavy cream. Stir to combine.
- 7
Bring the sauce to a boil, then reduce it to a simmer.
- 8
Add the cherry tomatoes, red pepper flakes, and room-temperature cream cheese. Stir until the cream cheese is incorporated.
- 9
Partially cover the pan and let the sauce bubble slightly while beginning to boil salted pasta water. Cook until the tomatoes eventually split.
- 10
Taste the sauce and season with a pinch of salt if desired.
- 11
Cook the spaghetti for 1 minute less than instructed on the package.
- 12
When the pasta is nearly finished, reduce the sauce heat to low. Gradually sprinkle in the freshly grated Parmesan and stir to combine.
- 13
Use kitchen tongs to add the pasta to the sauce and toss until the desired sauce-to-pasta ratio is reached.
- 14
Cook for 1 minute more to thicken the sauce and allow the pasta to absorb it.
- 15
Garnish with chopped bacon and fresh parsley. Serve with Garlic Bread with Cheese.
